In 2016, Chef Carlo Huerta introduced his culture and its cuisine by opening Samba at Shangri-La at the Fort. Several dinner sets are available on Christmas Eve and Christmas Day. These comprise delightful dishes masterfully combining Peruvian flavors with the bounty of land and sea, and a welcome tiki cocktail.
The mildly spiced Ceviche de Conchas y Camarónen Crema de Rocoto, hearty Crema de Zapallo y Ají, and exotic surf ‘n’ turf Lomo a lo Macho are just some of the enticing appetizers and entrées in the five-course meals.
For those looking to share, Chef Carlo and his team prepared an equally indulgent family-style spread for Christmas Day. The tender Mero Picante con Camarones—a chargrilled grouper served with smooth fava bean puree—will make you want more, no matter how stuffed you are.
Samba also offers New Year’s Eve dinner that could be the best last meal of the year you’ll ever have. This includes the flawless Zamba de Chocolate whose well-balanced elements serve as a perfect ending to your 2018.
